Sustainability is at the heart of Ladro. From recycling 100% of their organic waste to create plant fertiliser you can purchase, to being on of the first restaurants to house their very own rooftop honey hive. Head Chef, Arron Edwards tells us how this is also an important part of his day to day in the kitchen.
Sustainability is an integral part of culture at Ladro. The owners Sean and Ingrid have always tried to put ethical and sustainable practices into place at the restaurant. From the packaging we use with our takeaway orders, (which is Biopack packaging) to the food scraps generated by the kitchen or left over from customers that are composted on both sites. These can then be donated to local projects or sold for a small fee. Even the toilet paper we use is made by a charity called Who Gives a Crap.
In the kitchen we try and source as ethically and responsibly as possible using local ingredients where we can.
It might sound a bit cliche nowadays, but my inspiration generally comes from whatever is at its best and in season. I think that seasonality and provenance should be fundamental to any chef. I also have a library of cookbooks at my disposal which helps. There are so many great dishes on the menu, I’d have to recommend them all- it’s too hard to choose just one.
the first bite
As a kid who grew up in 1980s England, there used to be this packet mousse mix called Angel Delight. I used to love it back then… not so sure now though.
Talking to my younger self, I’d tell him to be braver and bolder. Oh and to worry less.
Coming home from work, the first thing I do is kiss my 4 month old baby boy (and try not to wake him) then I have to have a shower. My wife is normally still awake so we can eat dinner together. We tend to eat a lot of fish, steak or chicken during the week, then it’s all of the good stuff on my days off – which consists of a lot of pizza and pasta.
Muhammad Ali would be my guest of honour at a dinner party I’m hosting. I’m a big boxing fan so I would be keen to know all of his stories. We’d eat whatever he wanted to, but I’d be the one doing the cooking.
